Recipe of the week..."Lemony Tuna Pasta"

Pasta fever...easy and yummy....














Lemony Tuna Pasta


Ingredients (serves 4)

375g dried thin spaghetti pasta
1/3 cup pine nuts
425g can tuna in springwater, drained, flake
2 tablespoon olive oil
3 teaspoons finely grated lemon rind
1/4 cup lemon juice
1/3 cup roughly chopped fresh flat-leaf parsley leaves
lemon zest, to serve

Method

1. Cook pasta in a large saucepan of boiling, salted water, until tender. Drain.
2. Meanwhile, place pine nuts in a frying pan over medium heat. Cook for 1 to 2 minutes or until light golden. 
3. Place tuna in a bowl. Add oil, lemon rind, lemon juice, parsley, pine nuts and pasta. Season with salt and pepper. Toss to combine. Serve topped with lemon zest.

my baby is a BIG girl...ngheee

assalammualaikum...

alhamdulillah...my lil baby has safely been circumcised yesterday...wehuuuu...

when we reached the clinic around 8 last nite, there were another couple with their baby waiting to be circumcised...a bit younger than my baby...i guess she's around 3 months or so..well, after few minutes they went in the doctor's room we heard "wwwwwooooouuuuaaaaaaaaa" ....

okayyyyy...that was really loud....i looked at my baby's face and said to her in a calm tone.."don cry ahh you....shame laa..."..it sort of a self encouragement words to myself actually..hahaha...what a cry baby i am..geee..

it didn't took long for the baby to come out of the room...yuppp....she's still crying but the parents were smiling...glad it's all over i guess..hihihi...right.......soon it will be us...anxiously...i took a glance at the door..hoping for my husband to be back soon...(ooo...he went to get some fresh diapers to be changed afterwards..) and unexpectedly (hahahaha)...."Intan Camelia...you're next..." i was like..NOW??!! without thinking, i just step into the doctor's room without my hubby...

"Ok diek...this is it...don't cry aahhh..."

when we walked in, i lay her down...took off her diapers..and held her hands while trying to comfort her as instructed by the doctor...i was like..ok...we can do this without Babah laa diek..hihihi.....Lia was busy mumbling and giggling over the nurse's Baju Kurung and her watch...hahaha...after the doctor praises Allah and Shalawat...the next thing i knew..it's done..erk??!! seriously?? it was freaking fast...Lia didn't even cried a bit...alhamdulillah....Dr. Huda is definitely an experienced doctor..she's even good with kids...we love her..ngheee

few minutes after that, Babah came in to the room with the diapers...he was surprised that it's all over and it happened soo fast...he didn't had the chance to experience the whole situation thingy...huhuhu...so we went out of the room, took some ointment for the cut and we're done!! like her usual self, Lia started to mumbling and giggling over people around her in the clinic as if they were talking to her...hahaha..but she had definitely stole people's attention that nite with her charming cheeky little smile..hihhihi..yeaaahhh...that's my girl.... 

what we thought would be terrifying was actually a not-bad-not-to-worry kinda situation..and alhamdulillah we have fulfilled all the basic responsibility (at least for now) to our baby as a muslim parent...alhamdulillah...  

she has grown soo fast...it felt like only yesterday i gave birth to her..huhuhuhu....looking forward to many more exciting experience with this little mak nenek..hihihi

Recipe of the week...."Stuffed Baked Potatoes"

this week special....a healthy yet yummy side dish...nyummmm...












Stuffed Baked Potatoes


Ingredients (serves 4)

4 large potatoes
30g unsalted butter
2/3 cup (160ml) heavy cream
4 tbs grated Parmesan cheese
1/2 cup chopped chicken meat
3 shallots (spring onions), finely chopped
4 tomatoes, peeled, seeded, chopped
1/2 cup (125ml) olive oil, plus extra to drizzle
4 tbs tomato sauce (ketchup)
1 tbs chopped basil or flat-leaf parsley

Method

1. Preheat the oven to 180°C.
2. Wash the potatoes well, then dry. Wrap each potato in foil, place on a baking tray and roast for 1 hour
3. Remove from oven and cut a small slice off the top of each potato. Scoop out the flesh and place in a bowl  with the butter, half the heavy cream, the Parmesan, chicken meat, shallots and half the chopped tomatoes.
4. Season with salt and pepper and mix together. Pile back into potatoes, drizzle with extra olive oil and return to the oven for 20 minutes or until golden.
5. Meanwhile, add the basil or parsley and season with salt and pepper. Serve the potatoes with the sauce.
